Lorraine Pascale talks with Potluck Video about "A Lighter Way to Bake"

Potluck Video sits down with Lorraine Pascale, author of A Lighter Way to Bake.

Baked goods are a favorite across the globe, but being that the sweets are not the best for your health or figure, Pascale wrote the book about cutting down recipes while still having great flavors involved. "Baking is traditionally, obviously, quite a naughty thing for you," says Pascale, "I thought how wonderful it would be for people to be able to eat baked goods but feel a little less guilty about it."

On whether or not to use sugars or sweeteners, Pascale says, "I prefer to use regular sugar. I don't use any of the sweeteners. I use things like light yogurt and low egg whites, that kind of thing. So, lots of whisking, very light and airy."

Also when you're baking a cake that's lighter, Pascale says, "It can get dry because it doesn't have a high fat content." She goes on to saying, "I experimented a lot with different recipes and I really wanted recipes that tasted amazing because you wouldn't actually know they were low sugar. You have to want to eat it. There's no point in making something that tastes like cardboard."

The cook book does not only have desserts. There are delicious meals as well. She says, "I think the recipes are beautiful, tasty, there's lots a fresh fruit, lots of flavor. There's savory foods as well." Pascale's favorites in the book are the Baked Coconut Shrimp, Cheese Souffle, and Skinny Mac'n'Cheese.
