Chris Leahy of Lexington Brass demonstrates to Potluck Video how to make Gluten-Free Waffles.
Ingredients:
3 cups of gluten-free flour
1 tablespoon of baking powder
1 tablespoon of baking soda
2 tablespoons of pumpkin spice- Cinnamon, ground nutmeg, ground clove, and pumpkin powder
2 tablespoons of sugar
3 eggs
2 cups of milk
1 tablespoon of vanilla extract
1 tablespoon of canola oil
Make sure your waffle iron has reached the optimum temperature. Even when using a nonstick surface waffle iron, Leahy recommends spraying your iron with a cooking spray like Pam. Let the waffle cook to a golden brown.
Leahy caramelized a banana with a blow torch, but you can caramelize it the old-fashioned way in a large, heavy-bottomed skillet with butter and sugar. Lay the banana on top of the waffle.
Add a slice of cinnamon flavored butter and a handful of sweet blueberries.
