Potluck Video sits down with George Weld of Egg in Brooklyn, New York and learns how to make the perfect scrambled egg.
With Egg's menu, Weld says, "Our approach with everything we do here, especially the scrambled eggs, is the simplest possible version that way it shows off the egg itself."
The key to the perfect scrambled egg: Really good whole butter. Not only is butter simply delicious, it's a traditional go-to for cooking eggs. Butter when it is whole contains fat and milk solids and water. When the water evaporates during the cooking process, it helps to steam the eggs.
Most think to add milk to when cooking scrambled eggs, but milk does the same thing the water in the butter does. With good butter, you don't need milk!
The tools of the trade are simple when cooking up some scrambled eggs. However, you don't need to get too technical. In the kitchen of Egg, they always use non-stick for cooking their scrambled egg and Weld doesn't push for any changes with this technique.
When asked about the biggest mistake he sees when people cook their scrambled eggs, he says its cooking the eggs over too much heat. To avoid this faux pas, Weld recommends, "Cooking them over medium heat so you can actually watch them come together." He goes on to say, "With doing that over time, you really start to learn just the right time to take them off and they won't dry up too fast."
Adding kosher salt while the eggs are still cooking is the only amount of seasoning you'll need when you have a nice quality batch of eggs and whole butter.
